This guacamole tastes great and can be whipped up quickly, so my family dubbed it the Great & Easy Guacamole. Not a very exciting name, but it’s pretty self-explanatory.
Just a warning: Take the tortillas out of the oven BEFORE the fire alarm goes off… (I may have forgotten- okay, I did forget- to do that…)
Great & Easy Guacamole
Yield: 8 servings
- 2 avocados
- 1 tablespoon lemon juice
- 2 tablespoons chopped onion
- 1/4 to 1/2 teaspoon salt
- 2 tablespoons olive oil
- Dash (generous) garlic powder
- 1/2 cup salsa
For Chips:
- 6 to 8 corn tortillas
- Olive oil
- Salt (optional)
Preparation:
Preheat oven to 500°F. Cut the tortillas into small triangles, place on a baking sheet, and coat with a small amount of olive oil. Bake in the oven for 4 to 6 minutes, flipping halfway through cooking time. Place in a serving dish, and sprinkle with a dash of salt, if desired.
Cut the avocados in half and discard the pits. Remove the flesh and place into a small bowl. Using a fork, mash the avocado until it reaches the desired amount of smoothness. Stir in the remaining ingredients. Transfer to a serving dish, and top with salsa. Serve with the chips.
